You can check and see what language are available to you by

Select Menu > Settings and Phone > Language .

Change the device language

Select Phone language.

Change the writing language

Select Writing language.

Activate predictive text input

Select Predictive text.

If you do not have Chinese in the option, then you need to have the language pack containing Chinese installed at your local Nokia Care Point. Problem is that you will lose this language pack everytime you update the firmware. The phone will always revert back to its original language pack.
