Where do I begin?
Where can I find a repair manual to rebuild an Akai mpk25 that when obtained, was in separate parts in a box? How do I find out what's missing if anything? How do I know if anything was damaged? Where do I begin?

Searching online for the service manual or the schematics gives no results but perhaps you could contact this supplier and ask if they have the service manual or the schematics for the keyboard controller. It never hurts to ask
Here’s the user manual if you haven’t already got it and you do get it working
