Whenever I open the door, step on the accelerator, or connect to the bluetooth. The volume goes to Max all by itself. Also if I just have it on for awhile it will do it I have rewired outside checked relays in grounds in the vehicle. Also replace fuses, Any other ideas

Try removing all the radio's connections except the main wiring harness. If the problems stops, then it's likely an issue with one of the other connections such as the wired remote input. The Sony XAV-AX100 has a wired remote input intended for steering wheel control and it's possible that connection is acting wonky. Loose or incorrect connections at other inputs such as Sirius, mute, mic, remote turn-on, etc. can cause the radio to act weird. Take a look at the buttons on the faceplate and the remote to see if any are stuck or jammed.
