Battery percentage after restart sometimes shows 1% , not every time

So i changed the battery with a ifixit on my iphone 13 pro. After i installed the battery immediatly it showed 1%. Glued the phone back and charged to max and allowed to drain to 0. Then after 1 week i shut off the phone manually, then turned back on, and was surprised it showed 1%. The immediatly turned back off the phone and after turn on it showed again the correct percentage. Any idea whats the problem?

So after restart it recovers the normal percentage. Can you recommend a battery analysis tool? Thanks
