The connector is really the only thing that you can reasonably check. Ordinarily I'd say it's a long shot, but Google changed the design of the display connector retainer on the 7 model. Here's the retainer on my 6 Pro
As you can see, there's a screw holding it down, meaning no amount of impact or force can knock it loose. Contrast that with the retainer on your 7 Pro.
No screw, right? So although it's unlikely, it's not impossible for the retainer to pop out of place. If it has, then the connector underneath is also free to come loose due to being bumped or jarred.
So yeah, open it up and check the connector. If it's popped loose then that's a good indication that you may be able to fix it by reseating the connector and resecuring the retainer. Otherwise go ahead and unplug it and check the connector; use a magnifying glass and a bright light and check both sides for any kind of damage; bent or broken pins in particular. If everything looks good, clean them with 90% or higher concentration isopropyl (rubbing) alcohol, give them a moment to dry, reconnect and test.
Now if you've gone through all of that and still have problems, chances are you're having issues with your replacement screen. The good news here is that iFixit screens have a lifetime guarantee and if there's a problem with it, it will be replaced at no cost. I would like to mention that iFixit sells genuine Google parts for Pixels, so there isn't a better quality screen available. That being said, I have noticed a tendency for their replacement screens to have issues; it could be attributed to confirmation bias, but it seems to me that I'm hearing about more problems with new Pixel screens than you would expect for a new part, and this covers several generations of displays made by them.
Anyway, if you get through all this and have concluded you should get in touch with the iFixit Store personnel, the best way I know of is via email at support@ifixit.com. I imagine it'll help if you give them your order number from when you bought the screen, but I'm sure they can look it up with your username too.
