I would like to upgrade my MacBook Pro to be able to run Catalina and eventually MacOS Big Sur. I am trying to upgrade the logic board and CPU and GPU as-well as RAM and the Wi-Fi and Bluetooth cards and an SSD. But I am unsure if I am actually able to do that. Can someone help me?

If you're okay with the age, the 2015 Retina is actually still quite good. It doesn't have M1's all-around performance credentials, but the 15" HQ variants (all 16GB for 2014/15) still holds up against the M1 in many situations with a modular SSD, but soldered RAM. The 2014 isn't a bad machine if you already own it, but unless you're getting a good price break stick to 2015.
I still run Catalina on mine (High Sierra on SATA based), rather than Big Sur - I don't like the AirPrint requirement which is my primary objection. For 32-bit SW, that died with Mojave so that reason is throughly expired.
I realize for many the 15” rMBP is the equivalent of buying a AMG vs a Honda but if you can afford to take the AMG, BMW M or a Maserati home with you can afford both, which one would you want?

I have two 2015 McBook Pro's (both the top version with 16GB RAM and 1/2TB SSD's) The 13" MacBook Pro M1 numbers are better than my systems ;-{ Granted not by a lot but enough to make me think what will the 16" model offer.
While it's nice to have a Maserati to travel to work it really is not the best choice given our roads are limited to 60MPH here in the states. And even the german autobahn has limits too, as there is just too much traffic on many of them to push it to even past 100KPH near the cities. So what does that have to do with which Mac??
It gets down to what your needs are for the task. Are you a racer or just a commuter?
For many the older models will do but then you get into the limitations of the hardware and macOS version supported. Catalina is technically the highest the 2015 models can go (Big Sur has issues which are still not fixed).
Thats why I started with the Needs and what Beee is Doing.
@danj That 16" is tempting coming from someone who remembers the 17" and wanted a proper replacement for the last 5 years they didn't have one. I wish Apple had a base SSD (soldered) and a second modular SSD which can be replaced by the user on that machine :/. If they did that and the M1X or even M2 chips beat out Intel (hopefully with 16/32GB base RAM on CPU+2 RAM slots which can take 32GB) I'd order it with 32GB on CPU and then put 32GB in the slots so I could have a 64GB Apple Silicon system when I needed to add more RAM.
For me it was the value proposition here with the 2014/15 - I can get similar performance for half the price and the SSD is still modular. Yeah I know it's a lot of machine for many, but when you can have 16GB of RAM, a modular SSD and the screen for less why not? I also don't need adapters for everything :-).
If you can get the Maserati for a fraction of the price by waiting until the price is right, I would not blame anyone for that - in this case, the 2015 Retina 15". Mine is semi fully loaded. i7 (4770HQ)/16/512/Iris Pro 1536MB.

Today Apple showed off their new 13” MacBook Air, 13” MacBook Pro and Mac Mini all with the new Apple silicon M1 chip!
While some of the details will need to be flushed out. From the presentation they don’t look bad from a performance and price standpoint!
I would seriously look at the Apple - MacBook Air as its less that what it would cost you to max out your system and even then you won’t be able to run Catalina on it.

The latest OS this model supports is Mac OS X 10.6.8. As far as I know, there are no logic board upgrades which can change this. You may be able to find a firmware patch/hack that allows you to install Catalina, but I wouldn’t recommend doing this because Catalina is not designed to run on any logic board designed for your system and a patched installation would likely lead to poor performance or glitchy behavior. Unfortunately Dan is right - if you need to run the later OS’s trying to upgrade this machine just doesn’t make sense, from both a cost and effectiveness perspective.

Is the new macbook worth it? I desperately need a new laptop. I was thinking apple would be my choice, never had a apple laptop. But i’ve heard that a lot of people dont like the m1 chip. Any suggestion for what laptop is really good aka will last a long time etc. Thanks!

So what is your needs? What are you doing on your system?
From a use perspective its quite good! The performance bets Intel systems!
From a upgrade perspective is not very good as the RAM and Storage are both soldered in. So you can't upgrade it so what you buy is what you'll have.
From a repair perspective there is only four major parts! Each will be around 1/2 the cost of a new system or a bit more. So if you are someone who drops or drowns your system you are really looking at a throw-away vs repairing as it will be too costly. There are a few smaller parts but they likely won't fail.
@danj i want one thats a workhorse and will last a long while in good condition. I would like a brand new one if thats the smart move with the new generation thats now available if its good for storage and regular usage, heavy school and work loads. I would like it to be updates the way iphones are for years to come. I also realize some generations of iphones arent worth it based on the specs and I'm sure a laptop is similar in that regard. Just a recommendation. I was looking at costco and saw different models and customer reviews good and bad. Whats a known great apple laptop that is overall satisfied customers and is that what the new macbook or airbooks comparable to? Thanks so much
@beee Mac's and PC's are more different to day than last year! The M1 is based on the A Series SoC used in the iPhone and iPad's. MacOS requires an emulator to run Windows and their CISC apps.
The construction of the Mac's is better than most Windows PC's. So just looking at it that way Mac's win, just like how most iPhones and iPads win for the same reason.
While I do hate Apples direction on how they construct their systems. I still use them and likely will for a few more years.
I think getting a 13" MacBook Pro with 16GB of RAM and as large a SSD you can afford would be a safe bet. If you find the 13" is to tight of space on the screen I would wait to see what Apple shows us at the WWDC if not sooner. Maybe a 14" and 16"

@beee - Sure its quite good for the price point. If you can I would get the 16GB model as it will last longer.

This is a hardware limitation across any platform which has soldered RAM and storage.
NO bro, you cant add storage to an apple device. You can with an android, using various sized micro/macro memory cards, but on NO apple devices can you upgrade the ram, . not even the desktops, not on tablets, phones, nada
other products you can upgrade, even if not everything, take my laptop, hp, has 4g ram, can be upgraded to 8, but then like you say, I then hit a hardware limitation of the mobo. cheers. we on the same team
@spacecadet420 - Is far as I know RAM is not upgradable in Android devices. The storage (flash) is expandable via the SD card slot and some Android tablets offer an internal expansion slot.
While I agree these newer M1 systems lack internal expansion, you can add storage (HDD or SDD) via Thunderbolt or USB-C devices.

So if I understand this correctly, you're trying to upgrade your laptop. Just buy a 2015 macbook pro. Will cost you the same amount of money
