The teardown looks like it was of the version w/ the integrated Intel graphics. Would the Radeon version have the chip on a differently laid out board and would that still leave enough space for a 2nd HD?

Yes. I was able to install two SAMSUNG Spinpoint M8 HN-M101MBB 1TB 5400 RPM 8MB Cache 2.5" SATA 3.0Gb/s Internal Notebook Hard Drive -Bare Drive from newegg.com in place of the single 500G drive Apple supplied.

The two motherboards would be different, but they should both be the same size/shape. A 2nd hard drive should still fit perfectly, assuming that you can get your hands on another one of these cables, as mentioned in the teardown.
