Hello,
With the help of this forum I’ve been able to upgrade my old MacBook Pro to a pretty decent machine. I have a 1TB SSD, a 2TB HD and 8GB of RAM. I am just wondering why it is not possible to upgrade the RAM beyond that limit. What would happen if I tried to install 16GB?

As much as you want to its just not physically possible to go past 8 GB in this series. The limiting factor is the architecture of the chip only has so many address lines.
The best way to think this is is I have a speedometer which is only 7 places (wheels) so what happens when the speedometer gets to 9,999,999 what would be the next digit? Remember we can’t add a wheel! So the speedometer will roll over to 0,000,000 as we can’t add eighth wheel! If we could your speedometer would be 10,000,000 and on we would go! This is where the i3, i5, i7 are limited to 32 GB (i7-2960XM Processor Extreme Edition) CPU’s.
FYI: so far the i9 are limited to 128 GB (Intel i9-9900K Processor) can do as they have the additional address lines, So going to 256 GB would face the same problem! No address lines to access it.

Here's the premium systems specs: 15" MacBook Pro 2.93 GHz Core 2 Duo (2009) as a reference that all the others also are limited to.
