Replacing the RAM or Flash chips on this logic board requires very specialized equipment and not a DIY'er job. The T2 chip does not deal with the RAM only the Flash (the T2 is only in the 2018 models). Apple uses custom RAM & Flash chips which are not available on the open market at this time, so thats not really an option.
Swapping out the logic board is the only alternative and Apple charges a premium and only permits a direct swap-out (same sized bd). Thus, leaving you to locate a used logic board which will also go for a very high cost and thats is assuming it could be done at all. I'm sure no one has even attempted this given how new the system is

I was just wondering if the 2018 model logic board would fit into my 2017 model chassis, given that the 2018 model has a slightly larger battery… etc. I’m happy to do it myself, and I’m sure I’d be able to find a logic board with 32gb ram in a few years’ time when the upgrade is due…
I’m aiming to do the same thing with my backup mid-2014 MacBook Air, I found a relatively cheap i7 8gb ram logicboard to swap my current i5 4gb ram one with :)

I think your over reaching as no one has even attempted this. Don't forget the '18 model has a better keyboard. Come back in a year or two and ask the question then.
