Here’s the IFIXIT guide to do it: iMac Intel 21.5インチ Retina 4K Displayハードドライブの交換 and IFIXIT sells the needed tool kit with a SSD drive which you can find here: iMac Intel 21.5" (Late 2012-2019) SSD Upgrade Kit. If you can swing it I would go to the 500 GB drive.
