I am currently deployed to Iraq so Apple Care is out of the picture. I have been looking for a replacement screen for my Apple Watch Series 3 (A1861) and the 3 cables that connect to the screen. If someone knows where to find that it would be greatly appreciated.

I would still try! Apple does offer special services for our military. As long as you can ship the watch you have that as an option.
You might want to ask someone to act as your proxy here in the States or Europe depending on where you bought it, if you find that easier.
The rub here is the series 3 watch is so new I'm not sure you'll find the part as most issues are still covered under warranty and many people get the extended warranty coverage as well.
