Apple went through several designs for the earbuds themselves --they started off big and got smaller, and there are are a few different varieties that go deeper into the ear canal than the standard model. But the mini plug at the other end is pretty standard -- earbuds that come with one ipod should work with every other.

The only exception I can think of is that there were some models of iPods that came with remote control adapters that plugged into the headphone jack. While these adapters should fit into the mini jack on any iPod, I'm not sure if the controls will work with every iPod.
