Sure. But the only ones you can use that I know of are the original Apple cards or the ones offered by OWC, such as these:

For using an adapter, No.

You will need to use the proprietary SSD that physically fits with that model of your MacBook. Yes you can switch to at least ones that use the same SSD key in slotting. Usually the sizes if I remember correctly are 128, 256 and 512 (Though this one will be significantly expensive and probably hard to find)

When you do switch to another SSD you will need to get Mac OS X installed again and optionally bootcamp after installing it to have Windows dual boot.

To add to Ben's answer here: Apple has used different types of SSD's over time. The older mSATA version systems could be adapted to support a M.2 SSD. But, it was sadly not reliable when you stressed the system.

The newer PCIe SSD units stopped the use of the adapter as people who tried it found the M.2 mSATA drive was just to slow in comparison to the Apple PCIe drives and the newer PCIe M.2 drives didn't work.

What @mayer pointed you to is by far the better answer here.

Fixed up my answer, my bad. I'll avoid posting one worded answers when the question requires a more detailed answer.
