I have seen videos where people change the icon displayed on an app but how do you change it?

The best way I have found is to download a launcher from the google play store. With many launchers you can apply custom themes and icons, and other things to customize your android OS. Some examples of launchers are: Action launcher, go launcher, smart launcher, next launcher, cobo launcher, nova launcher. Apex launcher, hola launcher, and many, many more.
