I followed step one, but the only thing to come off was the touch screen but not the screen with it... I'm more or less used to taking electronics apart and taking things easy, if I've got it right the touch screen is stuck to the screen if I've got it right, and it has come unstuck is there any way around this problem.

regards.

Ben HArd, "To the left of the Home Button under the glass there is a small square port through the plastic midframe. Insert a small hook into this port and carefully pull the midframe up. Do this very controlled you do not want to suddenly open the iPhone and tear (break) the cables and connectors at the opposite (top) end of iPhone. Before opening and during repair of iPhone 3GS make sure it is OFF." from here. Follow the answers provided by either Brad or Pollytintop. Both should work for you.

Are you able to show a picture of what your screen looks like? The display assembly is 2 parts, but they should come with screws holding them together.

I don't have the phone with me, wanted to change a friends battery, basically the digitizer seems to have come unstuck from the metallic holding part with the screws in, so it comes off without the screen pannel.

I'm upping the post.

I added a photo.

Looks like the adhesive got old or something and the front panel is just coming off. We sell adhesive strips for that part to fix that. To get the rest of it out, you could try using some needle noes pliers or something.
