I'm a first time DIYer at this. I'm cloning my hard drive to a larger hard drive so I can replace the internal HD. I have a USB 2.0 to SATA?IDE Adapter Cable. Do I have to have an "enclosure" for the new HD in order to move my data from the existing internal HD to the new external HD which is a &%) GB 7200 RPM Seagate SATA HD?

No, but ... If you did you could use the HD as a backup or a means to extend your MacBooks storage externally. What plans do you have for the old drive assuming it still healthy & works? Collecting dust.
If you do get an external case I'd go with a Firewire or dual FW & USB case.

Yes, this is also quite a good option.

No, the USB to SATA will do. Once you swap them, you can use the migration assistant to copy your old HDD.
