Generally, no, once the watch has been opened you can no longer assume it's water tight. Apple has specialized equipment meant to ensure the watch is sealed completely after repair, but unfortunately us normal humans don't have access to those tools.

I would definitely not recommend swimming or submerging the watch after a DIY repair. I'm not even sure I'd trust it after Apple had fixed it, personally.
